Brisket for the win again!

Today I had the tough decision of whether I wanted to spend 15 hours of my life smoking a brisket, or 15 hours of my life smoking a poem butt… if ya’ll can’t tell from the title, Brisket won! I may be from Iowa, and I do love pork, but beef will always win my heart, until the cholesterol clogs my arteries… so with that being said, here’s a couple pictures of this beautiful bitch… 15 lbs upon purchase

Then I trimmed 4 1/2 lbs of bullshit off, mostly deckle (real hard nasty fat) silver skin and brown crusty meat that just won’t cook right, I also took about 2” of the flat off that was just too damn thin to smoke for 15 hours, here is the lean mean version

Right now she’s resting peacefully in the refrigerator soaking in the injection I use, as well as SGP rub and some traeger beef rub… I’ll put her on the smoker tonight, let’s say 11 pm, and smoke into tomorrow afternoon… can’t decide if I want to mix Apple and Hickory or Pecan and Cherry wood though… I’ll flip a coin
 
Outfuckingstanding buddy, makes me hungry lookin at it and reading about it…I’d go with pecan n cherry, but who asked me.
 
So far it is great. Have smoked a pork shoulder, chicken and even did pizza with the fam last night
 
@John. We’ll see how it turns out first, my Briskets are hit and miss still, one will be good, the next one blah. I’m trying something different on this one, I’m going to cook it fat side down.
@Kad1 my son in law has a traeger, he loves his. I’m going to buy a Campchef Woodwind SG before summer to replace my worn out Masterbuilt
 
I’ve got a 6 burner WEBER also. That’s great grill but I like to slow cook also so sprung fro the Traeger
