It fine @DVA. One tip that might help you in the future is to make the muffin pan version. Use non-stick cupcake liners and let the cheesecake set properly before removing the individual servings from the liners. 😉

Practice makes perfect so make another one and eat it to your hearts content. :smiling_face_with_three_hearts:😁

Keto Chicken Parmesan

Ingredients
3 Chicken Breast, cut in half lengthwise
2 Eggs, beaten
1/2 teaspoon Italian seasoning
1 Cup Parmesan Cheese, Pre-shredded
3/4 Cup Marinara sauce
12 Ounces Fresh Mozzarella, sliced into 12 slices
Instructions
Heat a non-stick skillet over medium heat and pre-heat the oven to 375F. Combine the eggs and the Italian seasoning in medium sized bowl. Add the Parmesan cheese to another bowl. Coat the chicken in the egg mixtures, then into the parmesan, being sure to coat the chicken well.

Treat the skillet with avocado oil and cook the coated chicken on each side for 3 minutes. Remove to a baking dish. Spoon 2 tablespoons of marinara on top of each cutlet, followed by 2 ounces of fresh mozzarella. Bake in the pre-heated oven for 10 minutes or until the cheese melts.

You can substitute the marinara for pesto or a combination of both. Kirkland’s Pesto at Costco is excellent.

Nutrition per serving: 333 calories/21g fat / 4g carbs / 33g protein

Here is one for those who like to ‘set and forget’ using a slow cooker or an InstaPot.

Ropa Vieja- is a low and slow cooked beef stew. I would love to use some European wild bison (@TG) but I settle for a fatty beef roast or elk when available. The Cuban version calls for flank or skirt if that is your preference.

INGREDIENTS

1 (3 – 3 ½) pound chuck roast
1 onion, sliced
4 teaspoons minced garlic
2 ½ teaspoons dried oregano
2 teaspoons cumin
2 teaspoons paprika
2 teaspoons salt
1 teaspoon smoked paprika
½ teaspoon black pepper
⅛ teaspoon ground cloves
1 (14.5 ounce) can diced tomatoes
2 bay leaves

Add Later:
3 bell peppers (I use a combo of green, red and yellow), sliced
Green olives with pimentos, garnish

INSTRUCTIONS

Instant Pot:


Add all of the ingredients (except the ones listed under add later) to an Instant Pot.
Secure the lid, close the valve and cook for 90 minutes.
Naturally release pressure.
Shred the beef using two forks.
Press the sauté button, add the bell peppers and cook for 4-5 minutes, or until tender.
Stir in the green olives…

Slow Cooker:

Add all of the ingredients to a slow cooker.
Cook on low for 7-8 hours, or until the meat is tender.
Remove the lid and use two forks to shred the beef.
Stir in the bell peppers and cook on low for another hour.
Serve with green olives.

I suggest waiting to add the bell peppers until the end so they don’t get too mushy and dissolve into the stew.

Need a cold cereal replacement for keto? @PHD turned me onto these. They are expensive compared to regular cereal but look at the nutrition label and you will see why. The box is huge!!! They are pretty damn good. Add a couple tablespoons of MCT with whole milk and you have a perfect keto breakfast cereal… minus the rainbow marshmallows. 😉
