Fucker was 20.79 lbs, been in my freezer since New Years, I trimmed 5 lbs of things I didn’t like and fat cap, and a lot of the deckle between the point and flat… here she is packaged, unpackaged, trimmed and rubbed. Going on tonight around 9 pm I think, with post oak briquettes and pecan wood at 225 for a low and slow overnight smoke…

Rubbed with SPG, And Kosmos Cow Cover
And Texas Beef. No injection as I’m cooking low and slow, I’ll utilize a water pan in my smoker

Looks awesome. I just took mine off. Resting it now. Burned my poor puppy taking it off. Wasn’t expecting so much juice to come out pulling it off. Rushed him to the sink amd flooded him with cold water. He seems fine. This damn brisket better be worth it. Lol
 
How was the smoke ring? Another good
Indicator is how well it bends, either over a knife or
Your finger, like my photo, and the pull apart test, a slice should pull apart between the muscle fibers with little resistance
