Here’s the ribs… St Louis spare, slightly trimmed, seasoned with chipotle and pecan rub, smoked with apple and mesquite. This is after the first 3 hours on, just before I wrapped… I forgot to photo the home made smoked beans before I put them on too… I’ll snap a photo before we eat
