Ukrianian Borscht for Health and Dieting

1 onion
1 parsely root
1 carrot
8 beets cooked or uncooked and peeled (if uncooked has to cook longer)
2 liters broth
1/4 of Italian cabbage (sometimes can substitute for other types. Does change cooking time to get softer)
1 can white beans with juice- don’t drain
1 clove garlic

Some butter and olive oil in pan. Saute the chopped onion. Shred the carrot and parsely root. Temp is 4 on scale of 9 being highest.

Chop the beets into small cubes. We bought the precooked and peeled beets. Makes it faster.

Chop the cabbage up.

Add in clove of garlic. 2 Bay leaves. 2 pepper uncrushed. Teaspoon herb pepper. Sprinkle some salt and pepper. Bring to boil then simmer 20 minutes.

Add 4 tablespoons canned tomatoes and give an extra 5 minutes. Turn off and 1 tablespoon of lemon

I like to let it slow cook longer. Top the bowl of with sour cream and stir it in so it melts.

Now when dieting sometimes I would add in 2 cans of beans when wanted more carbs or take out the beans when lowering cals more. Sometimes skip the sour cream or low cal versions.

This will get you several meals. I would eat whenever hungry. I felt great eating this daily. Cholesterol and blood pressure always looked good.

Make a pot of it bro. I never liked beets until I had this in Kiev. The different countries over here all have their own versions. Some include pork or beef. Or just the broth. This one tho is my favorite.
