…do different styles of cooking change the nutrients of a particular food?
I’m in the process of putting a bulking diet together and have based it around mainly chicken or turkey breasts (shocking I know) as the protein element for my main meals. I also know that steaming veggies keeps more of the goodness than boiling for example.
What I am unsure of is do different cooking methods retain more of the protein in poultry breasts? Grilling is my favoured option but I’m also a sucker for roasted bird on Sundays. Is there a difference in available protein or does it stay the same?
Tried Google for this and found so much conflicting information that I gave up and decided to throw this out to people that know.
 
Overcooking or high heat can damage amino acids so the simple answer to your question is yes. It is all based on internal temperature of the cut.

I sear steaks at 700 degrees on cast iron but the steak is served rare… G2G.

Roasted chicken is one of my favorites so I aint giving that up just for some additional aminos. I just make sure not to overcook it.

I also never use a microwave oven to cook any food, even reheating. It destroys enzymes and valuable micro nutrients.

I ve got 3lbs of chicken in brine in the crock pot and I am stuffing myself with greens because it isn’t ready yet… fried chicken right now would put a huge smile on my face
 
hahaha I just finished eating two servings of chix …and jasmine rice and I m still under macros… !! I have room for a cup of coffee! I’d apoloigize but I m not sorry
 
I’m going to bed- I’ve been thinking about fried chicken for two hours!! 😂 Tomorrows cheat day- think I’m gonna treat myself haha
 
Dave palumbo has a video saying to use a cooking oil with a high smoke temp he said once olive oil smokes or burns it loses its good properties and becomes bad for you. I know he recommendeds macadamia oil but you pretty much gotta order that online I cook my vegetable’s and meat in avocado oil or coconut oil.
 
Never cook with olive oil. I use it only unheated. Avocado, MCT and Macadamia are great high temp oils.

I fry my chicken in peanut oil FYI @KodiakGrrl 😉

So it’s cheat day today @KodiakGrrl
All main meals today (apart from my usual roasted chicken at lunch) will be fried chicken with whatever veggies I fancy at the time. Might even treat myself to bubble and squeak this evening with cold fried chicken 🍗 . Happy Sunday everyone. 🥦🥔🥕🌽🌶️🍗:milk_glass:🥗🍠
 
lol love it … I haven’t had a cheat day in sometime … I d love some home made fried chicken but I think I want some pizza !!! I did something similar coming off of a 35 carb cut using only vegetables. I ate rice with every meal that day. I paid for it but damn it was good lol
 
To be honest @KodiakGrrl I rarely have a proper dirty cheat day but I’m not interested in competing (only against myself lol) so every now and then won’t kill me. Sometimes I just think fuck it- I’ve earned it lol
 
I definitely agree… lol… we all earn it. i honestly can’t tolerate a lot of processed food so even when I cheat its usually just extra of what I already eat …
 
Haha like it. I need to change my outlook. I’m about to have my ‘celebration’ roast chicken- there’s no better smell in the world than a roasting chicken.
